The surgery went well yesterday and my dad is doing great! Thanks so much for all of your prayers/happy thoughts. I went to visit him last night and he was in great spirits...cracking jokes for the nurses and everything. I also threw some trash on his tray so he wouldn't feel like he was missing out on trashrunning.
I've always been amazed by people who can come up with their own recipes. How do they know what to use? And how much? And how do they know it will taste well together? I've never considered myself a good cook because I don't feel comfortable wingin' it. But last night I did! Kind of.
I used Caitlin's Turkey Bacon Egg White Mini Quiche Recipe as *inspiration*, lol. Except...I didn't have turkey. Or bacon. So I opened my fridge and pulled out random things I love.
- 1 egg and 3 egg whites
- 1/2 cup cottage cheese
- 1/4 cup monterey/cheddar cheese (shredded)
- approx. 1 tablespoon chopped onion (I had some leftover)
- 1 tspn. minced garlic
- salt & peppah to taste
- 1/4 cup chopped brocoli
Just mix it all up, pop it in the oven at 350 degrees for 30 minutes, and....
voila!
These were SO good. I basically love anything with cheese and eggs, though. You just can't go wrong there...right?

Glad to hear your dad is okay! hahaha that you put trash on his tray LOL! Thats cute! Omg that recipe looks delish! I fail at cooking & i'm super picky but i really might try that. It dosent look like there is anything in there i dont like! Did you eat it with potatoes or anything or just by itsself? I'm excited to try it! Happy Friday!

I have a recipe like the one you just did sitting around waiting to be used--except the husband keeps eating all the cottage cheese. Hrrmm.
For recipes, I usually get a bunch of recipes of the same thing and then pick and choose which ingredients to use. So it's kind of like I make up my own...not really.
I'm a recipe person. I tried throwing together something last night and well, it didn't taste so good. I really don't like to cook so I think that is half my problem.
I'm happy to hear your dad's doing well! Reading about his runs and selflessness put a big smile on my face.
I'll have to try that recipe! I've been buying eggs 2 & 3 dozen at a time! I'm like you, if there's egg and cheese, I'm a happy girl. :)

I do love recipes but I like to veer off them too! I also LOVE cooking with just some thoughts in mind! Let those creative juices go ;)

I'm not that great of a cook so if I'm experimenting, I'll look at a few different recipes to get an idea of how long I should cook something for, how it should all be mixed together etc. Sometimes it works, sometimes it doesn't, but it's always fun!

hahah yes I totally always cook without a recipe. I feel like if you combine your favorite things, you can’t really go wrong right?? Your quiche baby’s look so cute, and I’m sure they were wonderful. GO YOU for experimenting!!
Oh gosh. I am LOST without a recipe! I am a disaster in the kitchen! I envy those who have that natural talent (my husband sure does).
