Yellow Squash Casserole

My sister gave me some squash that she had grown, and I happily took it off her hands! I really, really hope to grow some veggies and herbs next year....I just never got around to it this year. Until then, I'll just steal others'.

I can't really remember ever eating squash (other than acorn squash, which I had once last fall and LOVED). And I've definitely never cooked with the stuff. So I went to my trusty cooking buddy (http://www.allrecipes.com/) and found this recipe for Yellow Squash Casserole.


The ingreds: (I didn't have milk, so I used non-fat plain greek yogurt, and I always subbed Wheat Thins - generic, 'cause mama is tryin' to save money! - for Ritz crackers...I LOVE Wheat Thins!!)


My question - how the *&%$ do you cut up a squash like this? I sliced off the skins, but stupidly forgot this has seeds. Do any of you have any good tips? I swear, this is why it takes me so long to cook. ;-)

I was a little skeptical about all of this....but it turned out amazing!! (I halved the recipe). I will say, however, that this was too much buttah for me. (Don't tell Paula, please). I hardly ever eat real butter, so I would definitely half the amount (at least) next time. It doesn't need it!


Do you ever eat or make squash? I LOVE acorn squash with brown sugar - I need to pick some up soon. And I STILL have not tried spaghetti squash....(I know!).

I find it easier to bake the squash a bit before tacklin' the whole cutting into pieces thing? If you just need to slice in half, no biggie, but the cutting into chunks can be dangerous I agree! Check out the recipe I did the other night - it used acorn squash and was soooo gooood! :)

Wow - that looks delicious! And, like you, the only way I've cooked squash is acorn squash with some butter and brown sugar in the oven... yummy. I wish I could give you a tip on how to cut it up but I'm at a total loss :) I can't even chop up onions properly.

I like to microwave it for 10 minutes and it gets it soft enough to cut and then I cut it up and bake it.

You have to try spaghetti squash. It's really good and such a fun food.

I love squash casserole! My mom, grandma, and aunts all make it during the holidays... sooooooo good!! But I think the wheat thins actually sound way better than the ritz crackers - excellent idea Holly!

My favorite squash ever is butternut squash. I could eat it everyday!! Acorn is a close 2nd! :)

Heh, um, I just get lazy and leave the seeds in there ;) It's easier to get seeds out of acorn squash but it's really tough with spaghetti squash, so I just eat them too. I'm not picky about that kind of thing though.

I just got some squash myself ("stolen" from my mom ;)

I like to just cut it in half, scoop out the seeds and bake it (similar to Erica) and I seem to like that a lot. I never really know what else to do with it, so I understand!

Looks delicious! I LOVE squash :D I tried spaghetti squash for the first time not long ago, but butternut is my favourite so far. They are SO hard to cut! I usually pierce it and microwave it for a few minutes, cut in half, scoop seeds out, cut into chunks and carve the skin off. Am sure there is an easier way but that's the best I have managed!

i microwave my squash a bit first. I poke holes in it with a knife then throw it in whole in the microwave. Makes cutting it a whole lot easier!

i love squash! I usually just eat the seeds in the small ones :)

butternut is my favorite, hands down.

Yum that looks so good! I make quash every now and then but the only thing I know how to do with it is slice it up and grill it on the stove! I usually add spray butter, salt, pepper, and garlic powder. Pretty basic but good!

I eat squash ALL the time. I cut it upp and add it in a stir fry, and I just made butternut squash fries for the first time the other day (delish)
