Stuffed Peppers

I have wanted to try Stuffed Peppers for a LONG time - so it was perfect timing when I saw a recipe last week in Jenna's article on Health.com!



First of all, these are super easy. Second, they are CHEAP!


Yum yum yum!


I was very impressed, although I actually got the diced tomatoes with chili peppers. And though I'm sure it could be classified as "mild" to most people, it almost had me in a sweat! Whew! But they were seriously good. Although, a little tricky to eat. I have to admit, I dug into them with my hands in the end. ;-) (Do people cut these things up to eat them?) It's a good thing my co-workers know how much of a classy chick I am.





Aggh - my boyfriend (Wentworth Miller) is guest starring on Law & Order SVU tonight! Super exciting. Anyone else a Prison Break fan? I was so disappointed when they cancelled it. I miss his sexy face.

I have always wanted to try those, but have been intimidated by my limited culinary skills. Maybe I should give it a go! It would be a nice surprise for my husband NOT to have to cook one night!

Those look great! I loved Jenna's article too, she is awesome right?! I usually cut my stuffed peppers down the middle to eat, then cut up each bite from there as I go along so I get an equal ratio of pepper:filling... guess that's my "pepper eatin' method" haha :) Have a great day! :)

stuffed peppers are so good - I've never tried them with quinoa!

we used to love prison break, too.

I made stuffed peppers on Monday night! I had been having a craving lately too! Except I got home from work so late that night that I decided to make a deconstructed pepper--cubed 2 peppers and put them in a skillet with some chicken broth to steam. Then made the rice, sauteed ground beef with onions and garlic. Combined with peppers and topped with tomatoes and cheese. Cut the cooking time in half. Tasted the same...not quite as cute though!

You know, I love your comments and super want to challenge you NOT TO THINK of YOURSELF AS A FAILURE! Especially for having a diet coke. I think we need to fight that mentality. 80% organic is FAR better than 20 years ago! Think about all the stuff we ate growing up! Aren't you perfect??? I also think that numbers are ways to feel more secure, but here's the truth...if you believe it, it is much better....

Your stuffed peppers look great! I've never tried making those before!! I've never seen prison break but I am a huge Law and Order and CSI fan so I'd probably like it! Thanks for the linkage!

NEAT!!! That is a good looking batch of stuffed pepper! It never occured to me to stuff peppers with quinoa, so I've GOTTA try that too. Definitely didn't read Jenna's article, but I think I have to go scope it out now. hehehe

These look SO GOOD! I'd definitely like to try them one day soo.
I haven't seen the recipe- do you have to rinse that kind of quinoa you have? I've made it once before but it was such a pain because I don't have a small enough strainer to rinse it properly. So the rest of the bag is sitting in my cabinet waiting to be used. I love quinoa too! Perhaps it's time to suck it up and buy a silly strainer.

I love stuffed peppers. They're such a versitile thing to make. You can stuff them with anything! I wish I had some peppers right now.
