Lovin' Some Cilantro


I don't know about you, but I am a LOVAH of anything cilantro. I have made this stuff about 20 times, and while it is really good with chips, I actually eat it by itself more often than not.




Corn and Black Bean Salad

4 ears of fresh corn (cooked and sliced off cob) or 1 large bag of frozen white sweet corn (cooked)
1 15 oz. can of black beans, rinsed and drained
½ cup chopped green onions
½ cup chopped cilantro
1 red bell pepper
¼ cup red wine vinegar
1 teaspoon sugar
2 teaspoons canola oil
½ teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon freshly ground black pepper
Dash of salt

Combine corn, black beans, green onions, cilantro, and pepper in large bowl. In small bowl, combine vinegar and remaining ingredients. Drizzle vinegar mixture over corn and beans. Can be served with tortilla chips, but good enough to eat with a spoon. And I do.

mmmmm this looks so easy and delicious! How long do you think it would last in the fridge? I'd like to maybe double the recipe and keep it on hand for a snack at work or a side dish at dinner...

Kristen - I am a stretcher of food. :-) I made it Saturday, and it's still in my fridge...had some last night and will probably use it up by this Saturday. I think it's actually better when you let it sit a bit in the fridge - all the juices are absorbed into the veggies - yum! I hope you like it! It's also REALLY good with feta cheese crumbles on top.

Not a huge cilantro fan, I find its really too strong for me... but that recipe still looks great!

Yum, yum!!! This would be fabulous with in season, fresh, farmers market produce!!!

I think this may be heaven in a bowl in my husband's eyes.
